Cabbage, kale, and tomato – Serves 6

Ingredients:
- 1 bag shredded cabbage
- 3 kale leaves, cleaned, checked, and cut into small pieces
- 2 tomatoes or a handful of cherry tomatoes
- 1 tbsp olive oil
- 2 tbsp lemon juice
- 1/2 tsp salt
Directions:
Combine
vegetables in a bowl, toss with olive oil, lemon juice, and salt to taste.
You
can substitute half a cubed avocado instead of olive oil and/or 1.5 cups
sunflower sprouts for the kale.
