Spinach Salad – Serves 6

Ingredients:
- 1 bag fresh spinach leaves
- 2 cups cherry or grape tomatoes, halved
- 1 basket mushrooms, sliced
- 1 yellow pepper, chopped
- 1 small can black olives, drained and rinsed
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp grainy mustard
- Salt and pepper to taste
Directions:
Put vegetables in a serving bowl. Wisk oil, vinegar, mustard, and salt and pepper, pour over salad, and toss to coat.
