Parve Onion and Mushroom Quiche – Serves 4 | LUNCH

Ingredients:
- 2 cups sliced mushrooms
- 1/2 cup chopped onion
- 2 tsp olive oil
- 2 tbsp reduced fat mayonnaise
- 3 eggs
Directions:
Saute the onions and mushrooms in olive oil, all to eggs and mayonnaise. Pour into an 8 inch pan and bake at 350 for 30-40 minutes.
