Roasted Zucchini – Serves 4

Ingredients:
- 4 small zucchini
- 1 tbsp olive oil
- 1/2 tsp salt
- Pinch pepper
Directions:
Wash and slice the zucchini into rounds or sticks. Toss with olive oil and salt and arrange on a cookie sheet lined with baking paper. Roast at 350 for 30-40 minutes.
